Venison Wellington with my own catch after joining Matt @grovegamelarder for the day 🥩 Wild Venison is super tasty and probably the most ethical meat you can eat - they’re naturally overpopulated and the government actively encourages culling - but doesn’t fund it, so we rely on people like Matt to keep their populations down. Only about half of the amount of deer are culled that should be each year so fine your local deer management specialist and support them by buying some meat, it’s super tasty and extremely lean and high in protein! How do you make Porchetta even better? Make a Porchetta Wellington, obviously 😋 De-skin a pork belly, roll it up with a herby compound butter, smoke at 140C for 3 hours then let rest with the excess fat before wrapping in mushroom duxelle, prosciutto and the ESSENTIAL crepes then double side egg washed puff pastry As per @jortskitchen sous vide that pork skin at 72C for 12-24 hours, scrape the excess fat off, slice it into a lattice, lay atop an egg washed wellington and bake at 220C for 30-35 minutes. Lay on a rack over a deep tray and immediately pour over 200C oil to puff up the crust! Who’s making their own Easter eggs this year?!? 😋 AD Fill it with a @myprotein Cookie Dough which legit tastes banging and has over 100g Protein in!! Just mix: 1 tbsp Biscoff spread 1 tbsp peanut butter 50ml milk 1 tsp vanilla extract 4 scoops natural Vanilla Whey 1 bag slightly crushed mini eggs And for the egg - get yourself a silicone mould online and 300g chocolate of your choice. Melt 200g over a Bain Marie constantly stirring til it’s JUST melted, take it off the heat, stir in the other 100g chocolate and keep stirring til you can’t see any lumps. Put back over the Bain Marie on low heat for 30 seconds to loosen slightly and you’ve got tempered chocolate ready to go! Pour into your moulds, tilt it all round to cover the whole thing, freeze for 2 minutes so the sides set, then scrape the outside of still melted puddle in the middle up the sides and tip it upside down and let let at room temp for half an hour.
