Thank you to you all for all of your continued support - BIG things to come in 2025 🫶 love you all & remember- when you do what you love, you will succeed. recipe below, enjoy xx Spicy Salmon Rice Bowls Serves 2 Ingredients Serves 2 8 oz salmon 1 cup rice 1 avocado, sliced 1/4 cup scallions, chopped 1/3 cucumber, sliced 1/4 cup soy sauce 2 tbsp honey 1 tsp chili flakes 1 tbsp rice wine vinegar 1 tbsp sesame oil 1 bunch cilantro 2 tbsp sesame seeds Salt & pepper Spicy Mayo 1/2 mayo 1/4 cup sriracha Directions 1. Cook rice in rice cooker. Make sure to wash it 3-4 times before until water is clear. 2. remove skin from salmon and slice into cubes. Add to a baking dish or bowl. Combine soy sauce, sesame oil, honey, rice wine vinegar and chili flakes in a small bowl. Mix together. Season salmon with salt and pepper and add sauce overtop. Cover with sling wrap and place in fridge for 30 minutes. 3. Remove salmon from fridge. Spray airfryer with avocado oil spray and add salmon. Cook at 400F for 10-12 minutes until salmon is cooked and browned. Remove from airfryer. 4. Once rice is cooked, add to a bowl and plate. Top with salmon bites, sliced avocado + cucumbers. Finish with sesame seeds, scallions and spicy mayo. Combine cilantro and scallions with soy sauce and drizzle overtop of the salmon. Preheat oven to 425F degrees. Line 2 baking sheets with parchment paper and set aside. Bring a large pot of salted water to a boil. 2. Add bacon to a lined baking sheet and bake for 15-20 minutes until bacon is crispy. Once cooked, set aside. 3. Once water is boiled, add in potatoes and cook for 8-10 minutes until fork tender. Add potatoes to a large bowl and let cool for 5-6 minutes. 4. When potatoes are cooled, add all of the potato seasonings and toss until potatoes are evenly coated. Add potatoes to a lined baking sheet. Using the bottom of a glass, smash potatoes. Add potatoes to oven for 25-30 minutes until crispy. 5. Remove potatoes from oven and top with cheese. Bake for another 8-10 minutes until cheese is melted. Remove potatoes from oven and add all of the toppings over top. Cook Banza Rigatoni according to box instructions. In a large skillet, heat olive oil over medium heat. Add garlic and chili flakes, sautéing for 2-3 minutes until fragrant. Stir in tomato paste and cook for 3-4 minutes, allowing it to caramelize slightly. Deglaze with vodka, stirring well. Let it simmer for 2 minutes to cook off the alcohol. Reduce heat to low and stir in heavy cream, Parmesan, butter, salt, and black pepper. Let it simmer for 3-4 minutes, stirring occasionally. If the sauce is too thick, add reserved pasta water gradually until the desired consistency is reached. Preheat oven to 400°F. twice baked potatoes are the perfect dish to make for the upcoming Super Bowl! let’s go birds! 💚🦅 Twice Baked Potato Yields 4 4 medium russet potatoes 1/4 cup unsalted butter 1 cup shredded cheddar + mozzarella cheese, divided 1/3 cup milk 1 tsp salt 1/2 tsp black pepper 1 tsp garlic powder 1 tsp onion powder 1 tbsp chives, chopped 1/4 cup avocado oil Directions 1. Line a large baking sheet with parchment paper and set aside. Preheat oven to 425F degrees. 2. Wash and dry potatoes. Coat potatoes in oil and puncture with a fork all over. Season with salt. Bake for 45-50 minutes. 3. Remove from oven and let sit for five minutes. 4. Cut off the tops of the potatoes and spoon out all of the potatoes into a large bowl. Mash potatoes with a masher until smooth. Add in butter, milk, 1/2 cup cheese and seasonings. Mix together until combined. 5. Spoon mixture back into the hollow potatoes. Smooth with the back of the spoon. Top with the remaining cheese and bake for 5-10 minutes until cheese is melted and bubbly. 6. Remove from oven and top with black pepper and chives. Find the recipe below, enjoy xx Creamy One-Pan Lemon Orzo with Salmon Serves 4 Salmon 4 salmon fillets (skin-on or skinless, about 4-6 oz each) I got my salmon at @wholefoods 1 tbsp olive oil (I use @getgraza or @terradelyssa) 1 tbsp paprika (I use @watkins.1868) 1 tbsp onion powder 1 tbsp garlic powder 1/2 lemon, juiced Orzo 1 shallot, diced 1 tbsp olive oil 1 tbsp garlic powder 1 tbsp onion powder 1/2 tsp chili flakes 2 tbsp butter (I use @kerrygoldusa) 2 garlic cloves, minced 2.5 cups uncooked orzo (I use @barillaus) 2 cups chicken or vegetable broth (I use @pacificfoods) 1 cup heavy cream (or coconut cream/milk) 1 lemon (zested and juiced) (@wonderfulseedlesslemons my fav) 2 cups spinach Salt and pepper, to taste 1/2 cup grated Parmesan cheese (I use @parmigianoreggiano) Fresh parsley and basil, chopped finely for garnish Directions 1. Season the salmon with the salmon seasonings and lemon juice. Heat olive oil in a large, deep skillet over medium-high heat. Mix until combined. then sear for 3-4 minutes per side until golden brown. Remove from the skillet and set aside. Save the salmon juices. 2. In the same skillet, melt the butter over medium heat. Add the minced garlic and shallots and sauté for 30 seconds until fragrant. Deglaze with lemon juice and cook for 1-2 minutes until brown bits at the bottom of the pan begin to lift. 3. Stir in the uncooked orzo, coating it in the garlic butter. Add the chicken broth, heavy cream, lemon zest, lemon juice, salt, and pepper, chili flakes, garlic + onion powder. Grate in parmesan cheese. Stir to combine. 4. Bring the mixture to a gentle simmer. Cook, stirring occasionally, for 8-10 minutes until the orzo is tender and the sauce thickens. Add in spinach and mix until spinach is cooked and wilted. 5. Nestle the seared salmon fillets back into the skillet. Cover and let cook for an additional 5 minutes to cook the salmon through. 6. Sprinkle in the Parmesan cheese and stir gently to combine. Adjust seasoning with additional salt, pepper, or lemon juice, if needed. 7. Garnish with fresh parsley and basil, parmesan cheese, a few cracks of black pepper and lemon juice and serve warm.
