✨ Ghanaian Beans Stew with Fried Plantain (Red Red) 🇬🇭✨ A rich and flavorful dish made with black-eyed peas, spiced tomato sauce, Geisha mackerel, and red palm oil, paired with crispy fried plantains. This classic Ghanaian meal is the ultimate comfort food! 🇬🇭🍛 Ingredients: Beans Stew: ✅ 1 ½ cups dried black-eyed peas ✅ ⅓ cup red palm oil ✅ 2 tomatoes, diced ✅ 1 tomato, blended ✅ ½ large red onion, sliced ✅ ½ large red onion, blended ✅ 1 Scotch bonnet, blended ✅ 1 shrimp bouillon cube ✅ 1 tsp paprika ✅ 1 tsp cayenne pepper ✅ ½ tsp garlic powder ✅ ½ tsp onion powder ✅ 1 tsp curry powder ✅ ½ tsp ginger powder ✅ ½ tsp black pepper ✅ 1 can Geisha mackerel in tomato sauce ✅ Salt to taste Fried Plantain: ✅ 3-4 ripe plantains ✅ 2-3 cups vegetable oil (for frying) ✅ Salt to taste Instructions: Step 1: Cook the Black-Eyed Peas 1️⃣ Rinse and soak the dried black-eyed peas overnight (or for at least 4 hours). 2️⃣ Drain and rinse, then cook in a pot with enough water until tender (about 45 minutes to 1 hour). Drain and set aside. Step 2: Prepare the Stew 3️⃣ Heat red palm oil in a pot over medium heat. 4️⃣ Add the sliced onions and sauté until soft and fragrant. 5️⃣ Stir in the diced tomatoes and cook for about 5 minutes until they break down. 6️⃣ Add the blended tomato, onion, and Scotch bonnet. Stir well and cook for another 5–7 minutes. 7️⃣ Crumble in the shrimp bouillon and stir until dissolved. 8️⃣ Add all the spices (paprika, cayenne, garlic powder, onion powder, curry powder, ginger powder, black pepper, and salt) and mix well. Let it simmer for 5 minutes. 9️⃣ Pour in the canned Geisha mackerel with its tomato sauce, gently stir, and let it cook for 5 minutes. 🔟 Add the cooked beans, mix well, and let it simmer on low heat for 10–15 minutes. Adjust seasoning if needed. Step 3: Fry the Plantains 1️⃣1️⃣ Peel and slice the ripe plantains into rounds or diagonals. Sprinkle lightly with salt (optional). 1️⃣2️⃣ Heat vegetable oil in a frying pan over medium heat. 1️⃣3️⃣ Fry the plantain slices until golden brown on both sides, flipping as needed. 1️⃣4️⃣ Remove and drain on a paper towel. ✨ Serving Suggestion: Serve the Ghanaian bean stew (Red Red) hot with crispy fried plantains on the side. So here’s the story: our Fergie girl passed away 2 weeks ago when she had a seizure/stroke that caused her quality of life to completely deteriorate, she was 14 years old. We have a heart for Bostons, they are the sweetest dogs, so we knew when we saw him running on the freeway he had to be someone’s dog. He had tags/collar, with his name/phone number and address. Phone number was disconnected and we went to the address and no one was home. Come to find out, the owner passed away which is why her daughter took the dog in and was out where we found him. He is so lucky to not have gotten hit by a car! God works in mysterious ways and this was a great reminder of that rescuing a Boston! #dogrescue #bostonterrier #story #lost #reunited #country

This was hard to make. Klaus came out of his crate limping and crying after going in perfectly fine. He would scream if you touched his leg/hip area. We took him to the ER in the middle of the night where his X-rays were normal. No broken bones or hip dysplasia. We don’t know what’s wrong, he’s on steroids and doing a little better the next day. He also has a small wound on his face from another dog. Probably won’t be posting him for a while, just thought I’d let everyone know. #germanshepherd #puppy #4monthsold #er
