Day 7 of 30 Day High Protein Recipes: TAIWANESE PORK AND DAIKON SOUP. Ingredients: 1 lb pork ribs, chop into 1 inch chunks 1 lb daikon, chop into chunks or cubes 1 inch ginger, thinly sliced 5 clove garlic, peeled water 2 tsp salt, more to taste 1 tsp white pepper, more to taste Cilantro or Scallion, for garnish Instructions: 1. Place pork ribs into a large pot and cover with cold water (enough to cover the pork). Bring the water to a boil over high heat and blanch the pork for a couple of minutes to remove any impurities. This step helps keep the broth clear. Drain and set aside. 2. Return the pork to the pot, along with daikon radish chunks, ginger, and garlic. Fill the pot with about 2L of water, or until all the ingredients are fully submerged. Bring it to a boil, then reduce to a simmer. 3. Cover with a lid and simmer for 45 minutes, or longer until the ribs are tender. 4. Season with salt and pepper. Adjust seasoning as needed. 5. Garnish with cilantro or scallions. Day 6 of 30 Day High Protein Recipes: RICE PAPER SHRIMP ROLLS (CHEUNG FUN). Ingredients: 6 sheets rice paper water 18 shrimps 2 green onions chopped 1 tbsp oil for brushing Dipping Sauce: 2 tbsp light soy sauce 1 tsp dark soy sauce 2 tsp oyster sauce 1 tsp sesame oil 3 tbsp water chili oil optional Instructions: 1. Fill a shallow bowl or plate with warm water. Gently dip one rice paper sheet into the water for 5-10 seconds, just enough to soften it. 2. Place the wet rice paper on a flat surface or cutting board. 3. Add 3 shrimp in the center, and sprinkle some chopped green onions on top. 4. Fold the sides of the rice paper inward, then roll it up tightly, making sure the ingredients stay tucked in. Repeat the process with the remaining rice paper and shrimp. 5. Brush some oil on top of the noodle rolls to prevent sticking. Place the shrimp rice noodles on top of a plate, then place the plate into a steamer. Steam for 3-5 minutes or until the shrimp is cooked through. 6. For the sauce, mix light soy sauce, dark soy sauce, oyster sauce, sesame oil, and water into a small bowl. 7. Pour the sauce on top of the noodle rolls. Drizzle some chili oil if desired and sprinkle more green onions on top. Ingredients 1 onion, chopped cooking oil water 1 lb ground beef 1 tsp yellow mustard ½ tsp salt ½ tsp black pepper ¾ cup shredded cheddar or American cheese 1 tomato chopped lettuce chopped dill pickle chips Special Burger Sauce/Dressing: ½ cup mayo ¼ cup ketchup 2 tbsp sweet pickle relish 1 tsp sugar 1 tsp distilled vinegar Instructions Make the Burger Sauce: In a bowl, combine all the ingredients for special burger sauce. Mix well and set aside. Make Caramelized Onion: In a cooking pan or skillet, heat 1 tbsp of cooking oil over medium-high heat. Add chopped onion and sauté until browned. Once onions begin to look dry, add 1 tbsp of water and continue cooking until the water evaporates. Add 1 tbsp of water again and keep repeating until the onions are dark brown and caramelized. Cook the Beef: In a skillet over medium heat, add 1 tbsp of cooking oil and ground beef. Break the beef apart using a spatula. Cook until until the beef is fully browned. Then add yellow mustard and season with salt and pepper to taste. Top with cheese, cover with a lid, and let the cheese melt. Turn off heat, drain any excess fat, then set the beef aside to cool slightly. Assemble the Salad: In a big salad bowl, layer the shredded lettuce at the bottom. Add the cooked ground beef to the salad bowl along with the diced tomato, caramelized onions, and pickle chips. Drizzle the burger sauce/dressing over the top and toss everything together until evenly coated.
